Celebrating...mid month

So the first month of the new year is half over. Time to check on yourself to see how you are holding up with those new year resolutions. Today, I am letting Stephanie take over for me so we can see how on (or off) track she is.

Hi all and thanks Pixxa for letting me post today. I must admit that I have not performed like I should be and this week, I will be changing to make sure I get back on target. I haven't been blogging like I want, I certainly haven't been exercising and I haven't yet started being in touch with friends outside of facebook and email. However yesterday I did start with my new recipe a week. It wasn't a total success, but it wasn't a failure!! I made lasagna soup. Unfortunately, I had no "soup" (liquid), but the pasta and meat sauce were pretty good in my opinion!! Here's a picture:

Today I have to figure out what I'm making next week so I can go grocery shopping!

Celebrating...self reflection

By now you are probably used to me passing on links to sites where I've found information that I think might be helpful. And usually these links revolve around food, so I absolutely jumped at the chance to share a link to something that wasn't food related.

January is the time for new beginnings and is typically a time for self-reflection, so imagine my delight when I found a blog, Personal Excellence, that offered 101 Important Questions To Ask Yourself In Life. Some of the questions are easy and you'll have answers right away, but there are a few that will cause you to think about what it is you want in life. And who knows what else you might find while you visit.

Celebrating...resolving to lose weight

It has been researched that losing weight is among the top 10 New Year's Resolutions. So it should come as no surprise that 1/2/12, the first non-holiday day of the year, is used as weigh-in day. This is the day used to set the benchmark for the weight loss that individuals hope to accomplish for the year.

At this time of year, there is alot of information floating around to help with weight loss. My suggestion, however, is to be smart. The weight didn't come on overnight and it took you a while to get out of shape, so make sure you take the proper time to modify your eating habits and increase your exercise habits so that your hard work to improve will stick!

Join a recipe site like http://www.food.com/ or http://www.allrecipes.com/ or some other site and seek out more healthy recipe options.One of the things I plan to do this year is to try out a new recipe every week. I think this will help make my "eat healthier" goal more fun and will help me to look forward to some of my meal planning.

As for exercising, start slowly. Just by adding 10-15 minutes of exercise 3-5 times a week, you'll see a big difference. And once you start to see a difference, you'll start increasing the amount of time that you exercise. My suggestion is to try doing different things to keep exercise from being boring or getting monotonous. Try walking one day, the next day crank up your favorite song and dance, dance, dance. Take up swimming or skating. The next day play some ping pong---just start moving your body!!

Most of all, just stay committed to your goal. Don't be too hard on yourself and don't set-up a regimine that is too strict and too difficult to follow. And if you slip, don't give up!! Just pick yourself up...dust yourself off...and start all over!! And pretty soon, you'll fall into your rhythm, get used to your new lifestyle change, and hit the (realistic) goals that you set for yourself!

Celebrating...Autumn

There is a chill in the air and the leaves are turning beautiful shades of yellow, orange and red. Autumn has officially arrived. Last weekend I happened upon a blog that gave a recipe that seems like it would be an amazing way to celebrate the days of Fall.

The blog Tokyo Terrace is by a woman who grew up in the Midwest, but currently lives in Tokyo. Her longing for a Midwestern Autumn prompted her to post a recipe for Apple Cider Pancakes. They look yummy so I thought I would share.

Celebrating...actions that speak louder than words

A friend just forwarded the information below and I thought I'd share it here. We've all seen it a million times before, but everytime it comes my way, I appreciate it more and more.

A nice modern-day parable!

IT'S WHAT YOU SCATTER

I was at the corner grocery store buying some early potatoes... I noticed a small boy, delicate of bone and feature, ragged but clean, hungrily appraising a basket of freshly picked green peas. I paid for my potatoes but was also drawn to the display of fresh green peas. I am a pushover for creamed peas and new potatoes. Pondering the peas, I couldn't help overhearing the conversation between Mr. Miller (the store owner) and the ragged boy next to me.

'Hello Barry, how are you today?'

'H'lo, Mr. Miller. Fine, thank ya. Jus' admirin' them peas. They sure look good.'

'They are good, Barry. How's your Ma?'?

'Fine. Gittin' stronger alla' time.'?

'Good. Anything I can help you with?'?

'No, Sir. Jus' admirin' them peas.'?

'Would you like to take some home?' asked Mr. Miller.

'No, Sir. Got nuthin' to pay for 'em with.'

'Well, what have you to trade me for some of those peas?'

'All I got's my prize marble here.'

'Is that right? Let me see it', said Miller.

'Here 'tis. She's a dandy.'

'I can see that. Hmmmmm, only thing is this one is blue and I sort of go for red. Do you have a red one like this at home?' the store owner asked.

'Not zackley but almost.'

'Tell you what. Take this sack of peas home with you and next trip this way let me look at that red marble'. Mr. Miller told the boy.

'Sure will. Thanks Mr. Miller.'

Mrs. Miller, who had been standing nearby, came over to help me. With a smile she said, 'There are two other boys like him in our community, all three are in very poor circumstances. Jim just loves to bargain with them for peas, apples, tomatoes, or whatever.

When they come back with their red marbles, and they always do, he decides he doesn't like red after all and he sends them home with a bag of produce for a green marble or an orange one, when they come on their next trip to the store.'

I left the store smiling to myself, impressed with this man. A short time later I moved to Colorado, but I never forgot the story of this man, the boys, and their bartering for marbles.

Several years went by, each more rapid than the previous one. Just recently I had occasion to visit some old friends in that Idaho community and while I was there learned that Mr. Miller had died. They were having his visitation that evening and knowing my friends wanted to go, I agreed to accompany them.

Upon arrival at the mortuary we fell into line to meet the relatives of the deceased and to offer whatever words of comfort we could. Ahead of us in line were three young men. One was in an army uniform and the other two wore nice haircuts, dark suits and white shirts...all very professional looking. They approached Mrs. Miller, standing composed and smiling by her husband's casket.

Each of the young men hugged her, kissed her on the cheek, spoke briefly with her and moved on to the casket. Her misty light blue eyes followed them as, one by one; each young man stopped briefly and placed his own warm hand over the cold pale hand in the casket. Each left the mortuary awkwardly, wiping his eyes.

Our turn came to meet Mrs. Miller. I told her who I was and reminded her of the story from those many years ago and what she had told me about her husband's bartering for marbles. With her eyes glistening, she took my hand and led me to the casket.

'Those three young men who just left were the boys I told you about. They just told me how they appreciated the things Jim 'traded' them. Now, at last, when Jim could not change his mind about color or size....they came to pay their debt.'

'We've never had a great deal of the wealth of this world,' she confided, 'but right now, Jim would consider himself the richest man in Idaho ..' With loving gentleness she lifted the lifeless fingers of her deceased husband. Resting underneath were three exquisitely shined red marbles.

The Moral:
We will not be remembered by our words, but by our kind deeds. Life is not measured by the breaths we take, but by the moments that take our breath.

So as we reflect on this, I hope that you find that it's not the big things, but the little things that make a difference.

Celebrating...National Kick Butt Day

I use several resources to find "special occasions" to celebrate. One of them is Chase's Calendar of Events, published annually by McGraw Hill. Today there is an entry that I thought was very good for most of us who are over 10 months past our annual New Year's Resolutions. At this point, I don't even know what I resolved to accomplish this year (which means I didn't do it), but today is the day proving that it's not too late.

Today is National Kick Butt Day. No, this doesn't mean go out and kick someone's butt. It instead is directed at YOU. According to the listing in Chase's Calendar of Events "On this day we commit to kicking ourselves in the butt to take action on goals we've set and not achieved, actions we've committed to but not taken, promises we've made and not kept, excuses we've created that have us stalled and difficulties we've faced and not overcome. This is the day we get our butts in gear and move forward in out lives. No butts about it!"

Further research of this "holiday" led me to Sylvia Henderson's website Spring Board Training(http://www.springboardtraining.com/). Ms. Henderson is a motivational speaker who provides "interpersonal skills for workplace, professional, & relationship success. We help people SHOW that they are as great as they say they are!" Her site offers alot of information and is definitely worth taking a look around.

So get to kicking your butt in gear because you are as great as you say you are....do some great things and say how great you are!

Celebrate...in another month

I was just sitting here reflecting on how fast this year has passed and it occurred to me that there is a day coming that is worth celebrating. Mark your calendars so that next month you can plan to celebrate 11/11/11. The time to celebrate? 11:11:11am.

Between now and then, we'll have to find at least 11 ways to celebrate...maybe with 11 bites of cake!!

Celebrating...October

Hello dolls!! Happy October!! Can you believe how fast this year has gone? We are in the final quarter and I feel like the year just started. But alas...we've saved the best for last. I mean, the three biggest celebrations of the year are upcoming...Halloween, Thanksgiving and Christmas (and New Years)...LET THE CELEBRATING BEGIN!!!

Surely we are all ready for the major celebrations, but I am here to help you look around and discover the little things to be celebrated. Things like the leaves turning their fabulous shades for autumn, or unpacking your cozy, warm sweaters, and football, and caramel apples (you knew I had to throw something food in, right?).

If you need some help coming up with things to celebrate, here's some ideas for you:

October is adopt a shelter dog month, so if you can go out and get a new friend
October is also financial planning month---a great time to start thinking of all of the trips you want to take next year
We all should know that October is National Breast Cancer Awareness Month. If you haven't already, make sure you have your annual breast exam...and be a friend and take a friend too!
My favorite is October is Positive Attitude Month
And food related...October is National Chili Month and National Popcorn Poppin' Month

This is enough to get you started...you'll just have to keep checking back for more things to celebrate this month. Or feel free to send me your ideas...

But before I go, I'd like to celebrate an important anniversary with you... sixty one years ago a famous icon was born...and here it is...

Peanuts premiered in 8 newspapers, The Washington Post, The Chicago Tribune, The Minneapolis Tribune, The Allentown Call-Chronicle, The Bethlehem Globe-Times, The Denver Post, The Seattle Times, and The Boston Globe as a daily strip and featured Charlie Brown, Shermy and Patty And as they say...the rest is history!

Celebrating...something to celebrate with

Okay, it's not my fault. I see all of these pretty cakes and since I love cake, I get distracted and somehow they end up here, sharing with you! But this one, I just couldn't pass up passing on to you. Are you ready?!! Pancake cakes!! That's right...I said it! Pancake cakes!! Or as they are titled on the site where the creator posted, cake batter pancakes.

I was over at "How Sweet It Is" and found this delectible delightful treat!! And their post immediately grabbed my attention. It started "I’m fairly convinced that the world would be a better place if more sprinkles were involved." That is soooooooo true!!! They believed that these cake batter pancakes should be saved for special occasions, but you know my philosophy...everything should be celebrated---so that doesn't limit the use of these. And I laughed when the writer said "But I don’t need an excuse to eat cake and sprinkles. I believe it should be a daily occurrence." My thoughts exactly!

Happy Nine/Ten/Eleven (9/10/11)!

Today is September 10, 2011 which means the date is 9/10/11. How cool is that? And just think, this "phenomenon" will only happen in the next three years and then not again until 1/2/3 which will be January 2, 2111. I don't know about you, but I don't think that I will be around for that...so now is the time to celebrate it!! See, you don't always have to have a major reason to celebrate. The simplest of things make great reasons to celebrate too! Happy Nine-Ten-Eleven!!

Celebrating...Old Maids

This one is for all the single ladies...

Today is Old Maid's Day. Yes, it the day dedicated to the single ladies. Old Maid's Day exists to put the spotlight on all of the fair maidens who haven't yet found their Prince Charming. Not exactly sure what you are supposed to do to call attention to yourself on this day, but I thought it was one of those quirky days that should be celebrated.

A bit of history. Old Maid's Day was created in sometime in the mid-1940's after WWII. The GI's were coming home and there were ladies...and then dances and socials...and that all grew into this holiday.

I know, there are those of you who look at being an Old Maid as a negative thing, but if there is one thing that I have learned in my many years, it's that life is what you make it. So you've got to find ways to make the best of everything. As the cliche's go...make the best of everything...live life to the fullest...when life gives you lemons, make lemonade...and live each day as if it's your last, because tomorrow is not promised.

So celebrate the fact that your Prince Charming is on the way. Happy Old Maid's Day!!

I just love music with a message! I have been hearing this song on the radio and loved it, but only recently saw the video. After I saw it, I just sat for a minute and reflected on hard hard life is. Instead of celebrating the things that make us all unique and who we are, people would rather put others down for being different. Bullying ain't cool! And it is so sad that so many people are taking their own lives because of it---or other reasons.

So please, take a listen and a look (as long as this video is up on youtube) and celebrate the things that make us the same and the things that make us different.

Celebrating...things to come

It's Auto Show time in Chicago. I remember as a child that our family used to go every year to see what was new. I would love climbing in the cars and pretending I was a grown up driving all the roads. And I was expert at collecting all of the brochures so I could come home and dream about all of the possibilities.

Well it's been a few decades since I've gone to the Auto Show, but I can still feel the excitement when I hear the news reports about the opening of the show. And every year I vow to go, but I never do.

Anyway, I just came upon this information about a true care of the future. The reporter said that maybe in the next 10 - 20 years, we will be whizzing around in these...or something similar. One can dream, right?!!

Celebrate...Fun at Work Day

Today is Fun at Work Day! Hmmm...can you think of any simple ways that you can have fun at work today? I don't usually like practical jokes, so I certainly am not recommending that. They are usually only funny at some elses expense. Not cool!

One thing that I used to do at one job I had was participate in an afternoon break. We would all gather together and go for an ice cream break. It was fun...a bunch of adults standing around like little kids with our ice cream. And it was quite a boost going back to work for the afternoon.

Something else that could be fun is to plan a little morning walk...around the halls or around the parking lot. Or plan to order lunch in for everyone...or plan for everyone to go out together at lunch time. It's too late for this now, but it would be fun to plan something like wear your fav sports team shirt, or wear a particular color from head to toe or wear your pajamas to work day. Then arrange some sort of contest.

There is so much that you can do---even in a short amount of time. So think of something that can work in your office and enjoy Fun at Work today!!

Celebrating...New Beginnings

Happy New Year!! I know...I am a tad late in extending my wishes. Try as I might, this has been an interesting year thus far. I pray that it only gets better! I have had a cold since the new year began. And this cold hit me hard. I think it was further amplified by the arctic cold temperatures that we have been having. Everytime I thought I was getting better, it would get super cold again and my symptoms would rebound. But I think the cold has finally moved on, so I am finally starting to enjoy the new year. Therefore, the wishes aren't totally belated. (smile)

So January is almost over. There has been so much to ccelebrate---I hope that you have been holding up your end and celebrating the big things as well as the small stuff. It is so easy to overlook the small stuff---that's why my mission is to make sure that we all take a little time to notice and celebrate.

So here we are...a new year, with a new, healthy (no cold) attitude...where do we go from here? I say on to the celebrations!! Today is Saturday and I am meeting up with a friend for breakfast and lunch. Weird, huh? Nope...we are celebrating the small stuff. For the longest time, we craved Chick-fil-a but the closest location was over two hours away. But the chain has finally moved into the Chicago area, albeit in the suburbs for now (downtown location to come in April). So I am picking her up and we are going to catch the end of the breakfast shift. Then we'll do a little shopping and then head back for lunch. Some people think that's crazy, but I say to each his or her own. When you find ways to celebrate, then do it!! And I tell you, a fun morning/afternoon spending time with a friend is a great way to celebrate the new year.

Celebrating...dazzling desserts for New Year's Eve

I know...I know...I keep saying that this will NOT become a foodie blog---yet all I do is post about food. Ha ha...today is no different. Well...actually it is a little different. Instead of posting one food thing, I'm posting TWO...ha ha ha!!

Earlier this week, I watched Oprah and she had the sisters from Georgetown Cupcakes on. They showed the absolute cutest dessert perfect for a birthday, an anniversary or...hmmm---NEW YEAR'S EVE!! Celebrating...the 12 Days of Christmas---with cake!

Celebrating...with something CUTE!

tsk...tsk...tsk! I have let the holidays get in my way of checking in here to celebrate. But given the fact that this is December, usually considered the busiest month of celebrations, I'm sure that you don't have to look far for things and ways to celebrate. I pray that you are all having a wonderful Christmas season and that you are looking forward to all of the get togethers that this time of year brings.

Hmmm...going to get togethers, hosting get togethers---I've just come across a really cute idea that could be used as a hostess gift or as a favor for events that you are hosting. It comes from one blog who got them from another blog and maybe even another. So I am doing my blogging part and passing it on too! It seems that the original posting came from Laurie Furnell's blog. On her blog she shows different variations and she offers the template for downloading so that you can make your own. So make sure you check it out!!

It's a Thanksgiving Leftovers Cake!! Yep...you make turkey meatloaf layers and add some cranberry filling with mashed potato frosting and topped with sweet potato frosting. Just slice and you've got an entire Thanksgiving feast!!

In November 1919, President Wilson proclaimed November 11 as the first commemoration of Armistice Day with the following words: "To us in America, the reflections of Armistice Day will be filled with solemn pride in the heroism of those who died in the country’s service and with gratitude for the victory, both because of the thing from which it has freed us and because of the opportunity it has given America to show her sympathy with peace and justice in the councils of the nations…"

An Act (52 Stat. 351; 5 U. S. Code, Sec. 87a) approved May 13, 1938, made the 11th of November in each year a legal holiday—a day to be dedicated to the cause of world peace and to be thereafter celebrated and known as "Armistice Day." Armistice Day was primarily a day set aside to honor veterans of World War I, but in 1954, after World War II had required the greatest mobilization of soldiers, sailors, Marines and airmen in the Nation’s history; after American forces had fought aggression in Korea, the 83rd Congress, at the urging of the veterans service organizations, amended the Act of 1938 by striking out the word "Armistice" and inserting in its place the word "Veterans." With the approval of this legislation (Public Law 380) on June 1, 1954, November 11th became a day to honor American veterans of all wars.

Veterans Day continues to be observed on November 11, regardless of what day of the week on which it falls. The restoration of the observance of Veterans Day to November 11 not only preserves the historical significance of the date, but helps focus attention on the important purpose of Veterans Day: A celebration to honor America's veterans for their patriotism, love of country, and willingness to serve and sacrifice for the common good.

Although "money can't buy you happiness"...a celebration can make you happier! Today is (undocumented) cliché day! Let's celebrate the cliché!!

A cliché is a trite, stereotyped expression; a sentence or phrase, usually expressing a popular or common thought or idea, that has lost originality, ingenuity, and impact by long overuse, acorrding to Dictionary.com. Celebrating...November

Happy November!! Can you believe that we have already lived through 10 of the 12 months we get in the year 2010? And in 2 short months we'll be celebrating the dawn of a new year, 2011. But between now and then, we pass through my favorite time of year...preparing for the holidays. Now that Halloween is past, it is time for all of the Christmas decorations to come up. I love seeing all of the bright twinkle lights everywhere you go. And of course this means this is the busiest time of year for celebrating...office parties, get-togethers with friends, family dinners---let the celebrations begin!!

And though there are lots of parties and events over the next few months, this is also the time for my most important hobby---shopping!! How could you not love this time of year?!! But in all the busy-ness, make sure you take time to rest among all of the celebrating. You want to make sure that you pace yourself so that you make it through the celebrating without missing a thing. Finally, it's also the time of year when we stop to think of our fellow man and help others. Don't forget to plan accordingly. In this interesting time, there are so many who could use a little hand.

So let's celebrate getting ready to celebrate...as the celebration season is here---that is after tomorrow...election day. Don't forget to vote!!

Celebrating...chocolate

I can't believe that October is almost already over. I have let a great month go by without alot of celebrations. I know I am trying to keep this blog from becoming another foodie blog, but this was a great month that I should have been celebrating. October is National Apple Month (I could have done so much talking about different types of apples, making caramel and candy apples and talked about apple picking), National Cookie Month (do I even mention that I could have done a cookie of the day for the entire month ), National Pizza Month (have I mentioned that pizza is one of my favorite foods?), and National Pretzel Month (home made pretzels...yum!). I missed out on celebrating alot with you!! But there's still a few days left for you if you are so inclined to celebrate any of these things this month. Fortunately, I didn't miss THE most important day...

Today...October 28th, is National Chocolate Day. Now anyone who knows me, knows that chocolate is one of my basic four food groups. (smile) No way should I ever miss out on celebrating ANYTHING chocolate---EVER!!! So here I am, ekeing in to celebrate National Chocolate Day! I think I am going to celebrate by going out and buying a chocolate bar, but no matter what, you should do something to celebrate too (that is, if you are a chocolate fan).

I found a really neat post about National Chocolate Day at SQUIDOO and they have some really interesting tidbits on chocolate. You can even celebrate today by taking the Chocoholic's Pledge.

So for heaven's sake, if you are a chocoholic like me, do something to celebrate National Chocolate Day!!

Today is Cranky Co-workers Day. This "holiday" was created by the owners of a website that has alot of quirky holidays, http://www.wellcat.com/. It's a day to let those cranks that are a part of your work situation be cranky, with no push back to be less cranky. But why not "sweeten" the day by taking in a box of donuts for morning snacks, or some other sweet treat for the afternoon?

Celebrating...Do Something Nice Day

I just love holidays like today. According to Holiday Insights, today is Do Something Nice Day. At first, you might wonder why such a day is necessary, but once we look at the routine that we fall into on a daily basis, it is easy to see how we lose sight of others. So since today is Do Something Nice Day, make sure you do something nice!

It doesn't have to be a major production or cost any money. But it could or it can. Things you might consider...holding the door open for someone, complimenting someone's shoes, or even flashing a simple smile as you pass by. Or if you'd like, take an office mate a cup of coffee or treat your assistant to an afternoon ice cream break.

But you don't have to do anything in person---why not give a donation to a favorite charity? Yesterday on Ellen, Ellen Pompeo introduced a new charity that is partnered with Huggies, called Every Little Bottom; whose mission is to diaper the bottoms of babies in need.

The possibilities are endless!!! So celebrate today nicely!!

Celebrating...October

Happy October!! It was a long, hot summer, but things are now starting to cool down as the earth prepares for it's winter slumber. These are the days I enjoy most...low humidity, cooler temperatures, and the sun seems to spread a lovely goldish-orange cast on everything. And soon, the leaves will start their magnificent color change---and it will be time to pull out the cozy, comfy sweaters.

Being a month of transition, October is known for alot of different things. Did you know that in 1892, this was the first day of classes at the University of Chicago? Or that Disney World opened on this date in 1971? Or that Night of the Living Dead was released on this date in 1968...and four years later, the book, The Joy of Sex was published?

October 1st is also Lee (Jeans) National Denim Day, National Diversity Day, World Smile Day and World Vegetarian Day. October is National Breast Cancer Awareness Month (don't forget those self-exams), National Popcorn Poppin' Month, Spinach Lovers Month, Photographer Appreciation Month and National Chili Month.

Wow...that's alot to celebrate!! Pick one...or two...or three and go for it!!

Celebrating...National Guacamole Day!

Today is National Guacamole Day...Happy National Guacamole Day!! I guess it makes sense to celebrate guacamole since we are in the midst of celebrating Hispanic Heritage Month and guacamole is traditionally a Hispanic dish.

I must admit that I am not a big guacamole fan. I can take it or leave it. But from what I understand about it, guacamole is (or should I say can be) one of the more healthy condiments or dips you can eat so I thought I'd share some guacamoole recipes. I went to the Hass Avocado website and wow...they have a ton of info and recipes!!

Celebrating...the Moon

I have a friend who is celebrating her birthday this week and in her honor, I thought I'd celebrate the moon. She is definitely a moon fan and often captures beautiful pictures of the moon rising over the lake her in Chicago. Today the moon enters it's first quarter so I thought today would be a good day to celebrate the moon.

My favorite time to see the moon is just as it's rising over the horizon before it starts climbing in the sky. It's so big and mysterious and beautiful and it just lights up the night when the sky is clear.

If you are more interested in the phases of the moon and more scientific information about the first quarter, I think Wikipedia has a nice article. But if you're just like me and just like to look up in the sky to appreciate the moon's beauty, that's okay too.

So tonight, take a look up into the clear, evening sky and celebrate the moon!

Celebrating...the comfort of a teddy bear

Woke up this morning to a cool, crisp, bright, sunshiny day---and it was wonderful!! Although some people aren't yet ready for Autumn to start, I have had more than enough of summer and welcomed the breeze as it floated through the house. It made me smile and burrow down under the cozy comfort of my sheets. And I immediately remembered the days when I would awake with my teddy bear tucked under my arm.

I have always loved dolls and teddy bears and always, even to this day, kept a nice collection of them. I love all kinds of teddy bears, new fluffy ones, old-fashioned scruffy ones and everything inbetween. But there was one special one.

I loved MY teddy bear! His name was David. (No, this pix is not my David.) I got him in 6th grade and he saw me through my college years and a little beyond. Now David was a rather big teddy bear, but there was always room for him when I snuggled 'neath the covers on a crisp, Fall day. He was always there with his big brown eyes and his open arms whether I needed a hug, a smile, a shoulder to cry on or someone to tell my secrets to. He was there to share in the good times and to comfort me and let me know that everything would be okay.

David brought me happiness and this morning reminded me of times past when he was my best buddy. He has since moved on to that big stuffed animal kingdom in the sky, but the times we shared will always be remembered. And as I snuggle underneath the covers, I smile and remember the cozy comfort of my teddy bear.

Celebrate...with one last summer hurrah

Can you believe that that Labor Day holiday weekend is already upon us? It seems as if it was only a few posts ago when we were celebrating the start of summer! Okay...it really was a few posts again since it seems that I took most of the summer off from blogging. But seriously...now is the time for that one big, last hurrah. Summer is slowly slipping away. Gone are the days (in my neck of the woods anyway) when it didn't get dark until almost 9pm. When you look up at about 7:30pm now, it's almost dark. That means that it's time to break out that favorite pair of sandals for one last wearing...crank up the bbq grill for one last summer party...squeeze out the last bit of suntan lotion and slather it on...grab that blanket or lawn chair and lay out and soak up the sun one more time!

It's been a great summer!! Bright, sun-shiny days, warm nights with cool breezes, high temps and not too much rain. Don't forget to make mental notes of all of the summer fun...soon we'll be celebrating the memories of these last glorious days of summer!!

Because of an auto accident.

One of them
Missed his bus.

One spilled food on her clothes and had to take
Time to change.

Car wouldn't start.

One couldn't
Get a taxi.

The one that struck me was the man
Who put on a new pair of shoes that morning,
Took the various means to get to work
But before he got there, he developed
a blister on his foot.

He stopped at a drugstore to buy a Band-Aid.
That is why he is alive today..

Now when I am
Stuck in traffic ,
Miss an elevator,
Turn back to answer a ringing telephone ...
All the little things that annoy me.
I think to myself,
This is exactly where
God wants me to be
At this very moment..

Next time your morning seems to be

Happy July!! Evidently, I decided to take the month of June off...definitely wasn't planned...just kind of happened. But today I am back...with a new look---do you like?

July is National Ice Cream Month. You know what that means, don't you? Ice cream every day!! Or as many days as your waistline allows you. Afterall, what is better on a hot, humid, summer day than a nice cool treat?!! And so far, this month has definitely been hot and humid and summer.

I was reading a news article online and came across something that I thought would be cute to kick off celebrating with ice cream. It's a recipe for a different kind of Turtle Sundae.

Here's the recipe, courtesy of Blue Bunny Ice Cream

Turtle Sundae

Ingredients:

4, 3½-inch waffle bowls
5 cups Blue Bunny Premium Homemade Turtle Sundae Ice Cream
16 chocolate Turtle candies
Assorted candy, for facial features
1 1.5-ounce package chocolate covered crisp wafer stick candy, such as Pepperidge Farm Pirouettes

Directions:

Form four scoops of ice cream and set aside. Fill each waffle bowl with remaining ice cream. Place each waffle bowl ice cream side down on an individual dessert plate. Place each of the four ice cream scoops that were set aside against each waffle bowl for the turtles' heads.

Arrange four turtle candy pieces partially under the bottom of each waffle bowl to form the turtles' legs. Press assorted candy pieces into ice cream scoops for eyes and mouth. Place one chocolate wafer stick partially under waffle bowl for tail. Serve immediately. (Makes 4 servings)

How cute for a summer afternoon party...or just make one for a special treat just for you!

Since summer decided to come early, and, since this weekend is the unofficial start of summer, I thought I would share the recipe of a cocktail I just saw on the Fine Living website.

Kiwi Kutee
By Stephen Phillips

You'll be feeling pretty cute after downing this delicious drink.

Ingredients:

1-1/2 oz. light rum
1 whole kiwi, skinned and diced
1 oz. lime juice
1 oz. pineapple juice
3 oz. guava juice
Quarter cup freshly chopped guava
Lime wheel

Preparation:

Blend all the ingredients until smooth. Pour into a tall glass filled with crushed ice. Garnish with lime wheel.

If you're not into alcohol, I think this will be equally as good if you replace the rum with 7Up or Sprite.

A nice, healthy, refreshing treat for a warm summer day!

Celebrate...bringing the heat

I was reading a friend's Facebook post last night and the comment that he made was if you blinked you've already missed spring in Chicago. Although we are still about a month a way from the summer season, Chicago is bringing the heat. Chicago is notorious for having only 2 seasons...winter and summer. Either it is cold, windy and wet or it's hot and humid. There is usually a week or two inbetween where we get nice, calm weather, but as my friend said, if you blinked, you missed it. Yesterday the temps were in the low 90s, today we're around 90, in fact the weather for the rest of the week is projected to be nothing lower than the mid 80s. And the humidity...as usual for Chicago, it's high.

So today, I celebrate Mother Nature bringing the heat. Pardon me while I crank up the air conditioner!!

So, since cakes and cupcakes are one of my most favorite things, I thought it might be fun to do a week of cakes. So let's not waste any time...here's the cake for day one.

Celebrating...PB&J Day!!

Happy Peanut Butter & Jelly Day!! I don't remember the last time I had a pb&j sandwich...and I'm not sure why. I LOVE pb&j's!! So when I saw the newsfeed from ABC Chicago News, I knew that I had to share this with you.

Not only is a pb&j a good treat, but can you believe they are good for the environment?!! According to the PB&J Campaign, "each time you have a pb&j, you shrink your carbon footprint, you reduce greenhouse gas emissions and water pollution, you cut back on habitat destruction, and you conserve water." Pretty cool for something so yummy, huh? Their theory is that any plant-based meal that you eat, instead of meals based around various meats can make a big impact. (Seems like a great site to check out if you are interested in living green.)

Then I found a website, Favor Affair, that has a free, 18-page downloadable e-book, National Peanut Butter & Jelly Party Guide. Really? An 18 page party guide? You know I had to download it and it's so cute!! It features all kinds of pb&j facts and links to cool and interesting pb&j stuff (including a link to a recipe to make pb&j hot wings). It's not really a party guide, but more interesting facts about pb&j.

If you are thinking of celebrating pb&j day with a cocktail, I even found a recipe for PB&J Jell-O Shots. Or if pizza is your thing, here's a recipe for pb&j pizza. Or...just simply take some bread, peanut butter and your favorite flavor of jelly, and enjoy!!

Celebrating...Herb Alpert

March 31, 1935 was the day that Herb Alpert was born. Most famous for playing his trumpet, he is known for his great jazz, latin, funk, pop and r&b sounds. Although most of his career was as a solo artist, his start was with the group Herb Alpert and the Tijuana Brass. He alo partnered with Jerry Moss to create A&M Records where he worked with other artists including The Carpenters, Sergio Mendes and Janet Jackson.

With Spring comes the beginning of the outdoor fairs season. After the long, dreary winter, people are anxious to start spending time outdoors. What better way than to check out a local fair? There are state fairs, country fairs, art fairs and more. And what do people like to do at these various fairs? EAT!

On Saturday evening at 8:30pm all over the world (whatever your time zone), participants in the third annual Earth Hour turned off the lights. How amazing that hundreds of millions of people in over 125 countries on all 7 continents joined together to support efforts for how we treat the world.

Celebrating...the best of both worlds

Ever had a craving for something sweet and couldn't decided whether you wanted a chocolate chip cookie or a brownie? Why choose---thanks to Matt Lewis of Brooklyn's Baked Bakery, you can have a Brookie! And thanks to Martha Stewart, you can make your own at home.

A Brookie is chocolate chip cookie brownie...oh my! To a chocoholic like me...heaven!!

Here's the recipe:

Brookie Ingredients:

Makes 6

1/2 cup (1 stick) unsalted butter, cut into 1-inch cubes, plus more for pie tins
3/4 cup all-purpose flour
1 tablespoon dark cocoa powder
1/2 teaspoon salt
5 ounces dark chocolate (60 to 72 percent cacao), coarsely chopped
3/4 cup granulated sugar
1/4 cup light-brown sugar
3 large eggs, room temperature
1 teaspoon pure vanilla extract
Chocolate Chip Cookie Dough (recipe below)
Ice cream, for serving (optional)

Directions:

Butter bottom and sides of six 4-inch-round pie tins; set aside.
In a medium bowl, whisk together flour, salt, and cocoa powder; set aside.
Melt chocolate and butter in a heatproof bowl set over (but not touching) simmering water. Turn off heat but keep bowl over water; whisk both sugars into chocolate mixture. Remove bowl from water and let cool to room temperature.
Add eggs to chocolate mixture and whisk until just combined. Add vanilla and stir just to combine; do not overmix. Sprinkle flour mixture over chocolate mixture. Using a spatula, gently fold flour mixture into chocolate mixture until just a trace amount of the flour mixture is visible.
Fill each prepared pie tin halfway with batter. Place pie tins on a large baking sheet and transfer to refrigerator; let chill for at least 1 hour.
Preheat oven to 375 degrees.
Using a 1/4-cup ice cream scoop with a mechanical release, scoop chilled cookie dough into six balls. Using your hands, shape dough to form perfect balls and gently form into a round disk that is slightly domed at the top; disks should be slightly smaller than the top of the pie tins.
Remove pie tins from refrigerator and gently press 1 disk of cookie dough into each tin of batter. Transfer baking sheet to oven and bake until cookie is golden brown, 20 to 25 minutes, rotating baking sheet halfway through cooking time. Serve warm with ice cream or at room temperature.

Chocolate Chip Cookie Dough Ingredients:

Makes 6

1 cup plus 2 tablespoons all-purpose flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 cup (1 stick) unsalted butter, softened
1/2 cup packed dark-brown sugar
1/4 cup granulated sugar
1 large egg
1 teaspoon pure vanilla extract
6 ounces semisweet chocolate chunks or chips

Directions:

In a large bowl, whisk together flour, salt, and baking soda; set aside.
In the bowl of an electric mixer fitted with the paddle attachment, cream together butter and both sugars until smooth and creamy. Using a spatula, scrape down side of bowl; add egg and beat until well combined. Mixture should be light and fluffy. Add vanilla and beat just to incorporate, about 5 seconds.
Add half of the flour mixture and beat until just combined, about 15 seconds. Add remaining flour mixture and beat until just incorporated. Gently fold in chocolate chips.
Cover bowl and refrigerate at least 3 hours before using.

Celebrating...movies

Last night, I watched the movie "Where the Wild Things Are". I don't remember reading the book as a child, but with the giant puppet creatures and the little I heard about the story, I thought this would be a fun and light movie. Hmmmm...not so much. While I thought it was visually amazing, I tend not to like movies that don't have a happy or hopeful ending. What I did enjoy about the movie was that it showed how every once in a while everyone, even a little kid, needs to have a little escapism. Young Max definitely escaped his everyday life with his very vivid imagination. BTW, while searching for an image, I found a neat review of the movie, if you are interested.

One of the ways that I escape is to be absorbed into a movie. It is for that reason that today I celebrate movies...pop one in your DVD player and grab on to an adventure.

Celebrate with popcorn too!

I was watching The Wendy Williams Show today and Jaime Oliver was on talking about his new show, Food Revolution. As he was talking (I LOVE his accent), he mentioned going to the circus and having some candy fluff. I fell in love!

I've always had a thing for the unique, the different and sometimes the strange---especially names. Candy fluff is THE cutest name for cotton candy! I'm guessing that's what he was referring to. And since I LOVE cotton candy...er...um...candy fluff, I thought...let's celebrate it!

Now...the circus...that's another story! But celebrate candy fluff!!

Celebrating...Chicago sandstorms

Today Chicago earned it's nickname, the Windy City. Winds were gusting at around 20-30mph all day today. Usually I love the wind, but these winds were chilly and biting, so it wasn't good. But despite the wind, I had to smile when I saw a snippet on the news of a sandstorm describing our wind. Now if you aren't from Chicago, we do have sandy beaches here, but nothing that could generate a sandstorm. Okay...maybe it's been a long day and I'm just in a silly mood, but I thought this was hilarious! (note: this is not the pix that was shown on the news, but I am cracking up imagining this rolling down the streets of Chicago)

Celebrating...I don't care

Not celebrating a non-caring attitude, but I am celebrating a song that I heard on the radio on my way home this evening. It's called "I Don't Care" by Raheem Devaughn. While the message is not enlightening, it is rather empowering. Basically he's singing about how his girl's friends don't think he's right for her. His message...I don't care. GREAT attitude!! But that's not really the part that I wanted to celebrate.

It's the music...the tempo...the beat that I love. When I heard this song, it just made me happy. It's what I would call a good driving song. Listening to this song, I could see myself driving down the highway in my (imaginary) convertible with the top down on a bright, summer day. The music has a riff that reminds me of the type of music I listened to when I was growing up.

I don't know if Raheem Devaughn is new to the music scene, but if he keeps coming up with music like this, I will come to know who he is.

Yesterday, I was reminded of Sesame Street for some reason and the thing that came to mind was how at the end of some of their skits, the announcer would come on and say something like "this message brought to you by the letter C". I always thought that was so cute so I decided that today, this post would be brought to you by the color yellow.
While yellow is not my favorite color, today is finally a bright, sunshiny day and it reminds me of yellow.

And what would the world be without yellow? There would be no Sesame Street's Big Bird.How would we find phone numbers without the Yellow Pages?
What would Texas do without it's yellow rose?
How would you travel in New York?
Red would have no best friend.

What fun would summer days be without a tall, ice cold glass of lemonade?
And how could dreams be sought without the yellow brick road?

Today (Saturday, March 20, 2010) is the first day of spring. This means that yesterday (Friday, March 19, 2010) was the last day of winter. The irony...yesterday, the last day of winter, the temperature was 60 degrees. Today, the first day of spring, we got snow. Well, at least it's the weekend!! Hope you have a good one!!

Happy St. Patrick's Day!! Today is the day most of us wear green, eat corned beef and cabbage, drink green beer and wear buttons that say "kiss me, I'm Irish", whether you have an Irish heritage or not. So instead of celebrating like everyone else, I thought I would share some little know facts about St. Patrick's Day that I found on the website, Associated Content. The article, Ten Little Known St. Patrick's Day Facts was authored by Brenda Skipper and published in 2007.

Of the 10 little known facts, I'd like to share 3 of them. To see the entire article, click here.

The first is his name. According to the article, St. Patrick's given name was Maewyn Succat.

Next is the color green. The actual color associated with St. Patrick's Day is blue, not green.

Finally, the shamrock. In ancient Ireland, the shamrock symbolized the rebirth of spring and therefore was a sacred plant. St. Patrick used the shamrock, which typically has three leaves, to explain The Trinity to the Irish.

If you'd like a little more detailed information, I found another blog, My Heritage, that might satisfy your St. Patrick's Day curiosity.

So while you are looking for that leprechaun and his pot of gold, make sure you celebrate the true meaning of St. Patrick's Day.

Celebrating...the first signs of spring

Last week as I was walking in the house, I happened to look at the garden (whose beds are in great need of being cleaned) and what did I see? The first signs (in my opinion) of spring. The tulips are peeking their heads up and their blooms are forming. Tulips are my 2nd favorite flower and I so love when they are in bloom.

And then today as I was taking the groceries out of the car, guess what flew past me? Yep, A Robin! Spring is definitely in the air!!

Celebrating...Lips Appreciation Day

Today is Lips Appreciation Day. And lips do need to be appreciated. We bite them when we are nervous, we burn them if our food is too hot, we decorate them in pretty colors, they are constantly in motion with all of the talking and eating and drinking that we do...and then there's kissing! They smile, they scowl and they are pulled taut depending on our moods. And when you purse them you can whistle a happy tune.

So take some time today to appreciate your lips. Buy a new moisturizing lipstick or a nice lip balm. And use your lips to smile and to tell the world that you appreciate your lips!!

Celebrating...spring into Spring

The time has come around the world for the biannual changing of the clocks. Yes, it is time to start Daylight Saving Time. Please note that it is not called Daylight Savings Time...there is no "s" on Savings.

There is a great article on the history of Daylight Saving Time and why it came to be at Daylight Saving Time, but basically it is in effect to take better advantage of utilizing daylight hours for work and energy efficiencies. In 2007 the length of Daylight Saving Time increased 4 additional weeks due to the Energy Policy Act of 2005. So now, those US areas who participate in Daylight Saving Time move their clocks forward the 2nd weekend in March and move them back the 1st weekend in November.

So while you might lose an hour of sleep this weekend, don't fret because come November, you'll get it back. In the meantime, celebrate the extra daylight, the lower utility bills and the coming of Spring and Summer.

Celebrating...a green river

Today, I am planning to FINALLY take advantage of a long-time Chicago tradition---dyeing the Chicago River green for the St. Patrick's Day Parade. You see, Chicago is a very Irish city and St.Patrick's Day is a definite all-city celebration. I think it has alot to do with the fact that this holiday is also seen as a "spring is coming" after a long winter. Regardless, every year, usually on the Saturday before St. Patrick's Day, there is a big St. Patrick's Day Parade in downtown Chicago. And just prior to the parade step-off, the Chicago River, which is already a dull green color, is dyed to a bright, almost fluorescent, kinda pea green.

Celebrating...cake baking

I remember a song that I used to sing as a child "if I knew you were coming, I'd 'a baked a cake...baked a cake...baked a cake..." and that song came to mind when I saw something on another blog's Facebook page, Bake and Destroy Facebook page, which led me to another blog, The Donut Database. What did I find? It was a giant donut. But it gets better...it's a cake pan shaped like a giant donut. How cute is that? I just love oversized or undersized things so this is right up my alley! So I went to Williams-Sonoma to take a look, and I found 2 other pans. Check them out.

Celebrating...corned beef and cabbage

We are exactly a week away from St. Patrick's Day. Last week I celebrated a St. Paddy's day dessert, so this week, I thought I'd celebrate the traditional corned beef and cabbage. When you think corned beef, you think 3-4 hours simmering the corned beef, but Paula Deen has offered up a quick, fast and in a hurry version that only takes about 20 minutes. I think this is what I will be cooking next week.

Here's the recipe (taken from foodnetwork.com)

Easy Corned Beef and Cabbage
by Paula Deen

Ingredients:

* 4 slices bacon
* 4 tablespoons butter
* 1 head green cabbage, coarsely chopped
* Salt and freshly ground pepper, to taste
* 1 can corned beef

Directions:
Cook the bacon in large pot over medium heat until almost crisp. Remove the bacon from the pot and set aside. Melt the butter in the pot with the bacon grease. Add the cabbage, stirring well to coat the cabbage in fat. Add about 1/3 cup water, and salt and pepper, to taste. Cover pot with a lid, and cook over medium heat for about 10-15 minutes. Meanwhile, chop the bacon into small pieces.

Remove the lid from the pot, and scatter chunks of corned beef and chopped bacon over top of the cabbage. Cover and cook until desired doneness. I personally like a little bit of crunch left to the cabbage.

Tip: Cabbage is one of those vegetables that naturally contains water in its leaves. Begin by adding just a small amount of water. As cabbage cooks, if it needs more liquid, then add more water.

Don't forget to add what you need to your shopping list so that you can enjoy a great meal for St. Patrick's Day!!

Happy Birthday to the pink princess of most little girl's (and big girls too) fantasy!! Yep, today, March 9th is known as Barbie's birthday. Mattel introduced the first Barbie on March 9, 1959 and the world would never be the same!

She's undergone numerous changes, had too many careers to count, and had clothing designed for her from the biggest and the best designers all over the world.
Last year was the big Barbie celebration as she turned 50---and boy was it a year of pink celebrations. This year, there are a few other notable Barbie celebrations.

In 1980, Mattel introduced the first Black Barbie. To be clear, there were other Black dolls in Mattel's line (Francie, Christie and Julia), but 1980 was the first time Barbie was Black. HAPPY 30th ANNIVERSARY BLACK BARBIE!!!

This year also marks the 15th Anniversary of Kelly, Barbie's little sister. HAPPY ANNIVERSARY KELLY!!!

I must say that I love my name. I can't imagine being named anything else but my name. Have you ever thought about whether or not you like your name? Or have you just accepted it as part of you?

Celebrating...a night of stars and friends

Only 2 more days until the Hollywood buzz!! Are you one of those who can’t wait until the Academy Awards? I am not a big fan and usually don’t watch. But this year, I just might. Not because I want to see the fabulous outfits, or I care who wins best movie or best actress (chances are I haven’t seen most of the movies nominated). I might tune in because of an invitation that I received.

You see, in this information age where distance is nothing but a computer screen away, I have been invited to an on-line Oscars party. How cool is that?!! A friend in planning to set up an IM group and the guests will be able to “chat” in real-time about what is going on. Scanning the invitee list, there was someone from California, someone from Atlanta, someone from New York and me in Chicago, among other places.

This reminds me of one of the best birthday gifts I’ve ever received. My friend in Minnesota sent me a DVD that she also bought for herself and we synced them and watched the movie as we held the phone and made our comments. Sounds crazy, but it was really, really fun!! The telephone and internet have made the world a much smaller place. If you can’t be there in person, you can still hang out…with a little electronic help. Who knows…20 years from now, maybe people will be hologrammed across the internet and be able to sit in the same room together. Maybe that will only take 10 years!

In the meantime, I am excited about the on-line Oscars party. So if you haven’t been in touch with one of your girlfriends in a while, why not call or email them and set something up.

In case you do, I’ve found some cocktails that you might want to enjoy---together, over the miles!!

Here are my three nominations:

THE PRECIOUS
"There's so much abuse and violence in this movie. I think that any adult who watches that movie should have a cocktail. That girl's gone through so much that, by the time you get done, you're so emotionally spent that you need a drink. And that cocktail is precious.

Recipe (makes one drink):
1 1/2 oz. vanilla-flavored vodka (suggest Smirnoff)
1 1/2 oz. unsweetened pineapple juice
2 tbsp. cream of coconut
3/4 oz key lime juice
Ice cubes
Lime slice

In a cocktail shaker, combine vodka, pineapple juice, cream of coconut, and key lime juice. Add ice; cover and shake until very cold. Strain into a chilled martini glass. Garnish with lime slice.

THE BLIND SIDE
"I'm a huge Sandra Bullock fan and this is a girl drink — a mom dessert cocktail for doing good at the end of the day. When her son wins the football game, God bless, she gets to go home and have her cocktail."

Recipe (makes 1 drink):
2.25 oz. half-and-half
1 oz. sambuca (suggest Romana Sambuca)
1/2 oz. coffee Irish cream liqueur (suggest Baileys)
Ice cubes
Whole coffee beans

Fill a cocktail shaker with ice. Add half-and-half, sambuca, and coffee liqueur. Cover and shake vigorously. Strain into an ice-filled glass. Garnish with whole coffee beans.

THE AVATAR

"Avatar was by far my favorite movie," says Lee, who is also the author of Semi-Homemade Cocktail Time. "Even though it was intense, it's amazing how you can bond with an animated character. When they plugged Sigourney Weaver into the tree, and you're just willing her to live, it was very emotional. The white cranberry's sweeter than the red cranberry juice so that's why I use that in this blue drink. And the citrus vodka honors that beautiful tree of life."

Recipe (makes one drink):
1 oz. citrus vodka (suggest Ketel One Citroen)
1 oz. white cranberry juice
1/2 oz. blue curaçao
1 squeeze lime juice
Ice cubes

In a cocktail shaker, combine all ingredients; cover and shake until very cold. Strain into a chilled glass.

Whether you are planning a party or watching solo, or not watching at all, enjoy Sunday---Oscar night!!

Celebrating...St. Paddy's day in 2 weeks

We are 2 weeks away from St. Patrick's day and I just happened upon a recipe that sounds like the perfect treat! It's a celebration of green and chocolate!! YUM!

The recipe comes from Hershey's Kitchens.

Minty Irish Chocolate Cream Pie

Prep Time: 15 min | Cook Time: 9 min
Skill Level: Intermediate

Ingredients:

* 9-inch pie crust, baked and cooled OR 1 extra serving-size packaged graham cracker crumb crust (9 oz.)
* 1-1/4 cups sugar
* 1/2 cup HERSHEY'S Cocoa
* 1/3 cup cornstarch
* 1/4 teaspoon salt
* 2-3/4 cups milk
* 3 tablespoons butter or margarine
* 1-1/2 teaspoons vanilla extract
* 1-1/2 cups frozen whipped topping, thawed
* 18 small (1-1/2 inch) YORK Peppermint Patties, divided
* 6 drops green food color(optional)

Directions:

1. Prepare crust, if desired.

2. Combine sugar, cocoa, cornstarch and salt in medium saucepan; gradually stir in milk. Cook over medium heat, stirring constantly, until mixture comes to full rolling boil; boil and stir 1 minute. Remove from heat; stir in butter and vanilla. Pour into prepared crust; carefully press plastic wrap directly onto pie filling. Cool; refrigerate 6 hours or until firm.

3. Shortly before serving, remove wrappers from peppermint patties. Remove plastic wrap from pie. Cut 9 peppermint candies in half; place, cut side down, at outer edge of pie filling, forming a scalloped edge. Finely chop remaining 9 patties; fold into whipped topping with green food color, if desired. Spread peppermint topping on pie. Serve immediately. Cover; refrigerate leftover pie. 10 servings.

So you've got 2 weeks to get to the grocery store to get your ingredients! Don't forget!!

Celebrating…the first signs of spring

Spring is definitely on the way! Know how I know? I had my first spider sighting. Though I’ve had to become brave, I absolutely HATE spiders and for some reason it seems like they are drawn to me. And the Spring and the Fall are THE WORST because we get a ton if these eight legged creatures.

But since Spring is not too far away, I thought I’d share some fun information that I found in a magazine that I was reading. When you think Spring, you naturally think flowers. So as I was reading the February 8, 2010 Woman’s World magazine (), I happened upon an article that talks about how flowers make people happy and healthy. Here is a brief summary of the article.

Flowers Really Do Make Us Happy---and Healthy! highlights the benefits of flowers besides just being pretty and smelling good.

Roses do bring out the romantic in you because of the chemical phenylethylamine. This chemical causes the lovely rose scent and has been proven to trigger the release of feel-good endorphins especially those that help you mimic the feelings of being in love. And people who sleep in rose scented rooms seem to have happier dreams.

Daffodils keep your brain young because they contain galantamine which is a compound that improves memory and reasoning. In some cases it has also been proven to curb age-related decline. This chemical is available in capsule form if you’d like to try it.

Magnolias help to ease your anxiety. Also available in capsules, the magnolia has two chemicals (actually phytochemicals) which are as effective as Valium, without the grogginess, at easing stress and anxiety. It has also been proven that they boost memory and problem-solving skills.

Jasmine helps to improve dexterity and concentration because the fragrance activates the beta waves in your brain that make you focus.

Gerbera Daisies (one of my favorite flowers) help to detoxify the air around you and their bright colors make you more alert.

Lavender helps with noticing details and catching mistakes. Linalool is a chemical in lavender’s essential oil that stimulates GABA production in the brain. GABA is a soothing neurotransmitter that heightens your ability to notice details.

In addition to these specific flowers, fragrant flowers, like gardenias, violets or lilacs, help to improve your memory. So if you have a big test to study for you might want to fill your room with one of these.

Finally, studies have shown that people who see flowers first thing in the morning tend to be more cheerful all day long!

So stop and buy some blooms…they could make you feel smarter, feel better or at the very least give you a bit of cheer to spread!

Celebrating...the start of a new week

Well, it's time to get ready for a new week...but as we look to getting started with what is to come, let's take a quick look back---a blast to the past!!

Oldies but goodies. Remember when...

It took 3 minutes for the tv to warm-up.

No one had a purebred dog.

When a quarter was a decent allowance?

Your Mom wore nylons that came in two pieces?.

You got your windshield cleaned, oil checked, and gas pumped without asking---all for free, every time? And you didn't pay for air? And you got trading stamps to boot?.

Laundry detergent had free glasses, dishes or towels hidden inside the box?.

They threatened to keep kids back a grade if they failed...and they did it!.

No one ever asked where the car keys were because they were always in the car, in the ignition and the doors were never locked?.

Lying on your back in the grass with your friends and saying things that started "that cloud looks like a..."?

Playing baseball with no adults to help kids with the rules of the game?.

And with all our progress, don't you wish, just once, that you could slip back in time and savor the slower pace, and share it with the children of today?

When being sent to the principal's office was nothing compared to the fate that awaited the student at home?

Basically we were in fear of our lives, but not because of drive-by shootings, drugs, gangs, etc., but because our parents and grandparents were a much bigger threat! But we survived because their love was greater than the threat.

Remember summers filled with bike rides, Hula Hoops, and visits to the pool and eating Kool-Aid powder with sugar!

Candy cigarettes?

Wax coke-shaped bottles with colored sugar water inside?

Soda pop machines that dispensed glass bottles?

Coffee shops with table side jukeboxes?

Blackjack, Clove anf Teaberry chewing gum?

Home milk delivery in glass bottles with cardboard stoppers?

Telephone numbers with a work prefix (Yukon 2-601) or party lines?

Hi-Fi's, 45 RPM records and 78 RPM records?

S&H Green Stamps?

And decisions were made by going 'eeny-meeny-miney-moe'? Mistakes were corrected by simply exclaiming 'do over!'?

Catching fireflies could happily occupy an entire evening?

Saturday morning cartoons weren't 30-minute commercials for action figures?

'Oly-oly-oxen-free' made perfect sense?

Spinning around, getting dizzy and falling down was cause for giggles?

And water balloons were the ultimate weapon?

Now didn't that feel good to go back and say "yea, I remember that"?

Celebrate...and look to the past to plan your future!!
